Are coupon codes created in Metorik automatically added to my eCommerce store?

In short, yes!

When a coupon code is generated and sent with an Engage email, that coupon is automatically created within your WooCommerce/Shopify backend.

That way even if you stop using Metorik, the coupons you've emailed customers are all still valid and exist in your store.
